White Star concept.

I've been digging through fluff and the basic idea is that the White Star is an organic ship that learns and becomes more experienced and tougher over time. The basic idea is to have young White Stars as Skirmish level ships and then have experienced Whites Stars as raid level ships. I would assume that Skirmish level White Stars would have a lower hull number, a less effective dodge, and the weapons might lose some of their traits.

The thing is the whitestar ISNT an organic ship. Not fully anyway, the ship doesnt fly itself like a shadow vessel (well more or less) and it doesnt get better at flying as it ages, the armour merely learns what its been hit by and adapts itself to better resist that type of damage in future, which is already ably represented by the adaptive armour rule.

Nice idea but I dont think it really fits for whitestars which only have organic components. Shadow ships on the other hand this works great for and indeed in 2nd edition this is exactly what you get with young shadow ships being war level and ancient shadow ships being armageddon level.

An absolute bookkeeping nightmare but how about White Stars (and all ships with Adaptive Armour) taking the first salvo from a weapon type as normal but any subsequent weapon system firing at the ship with the same type would have its Damage/Crew halved?

(e.g. type would include a Heavy Laser Cannon and Medium Laser Cannon as the same)

yes some probably would. For the record this is more or less how adaptive armour worked in B5Wars though, every hit you took from a particular type of damage (particle, laser, kinetic etc) allowed you to add a point of adaptive armour for that type of damage and all future hits got that much extra damage deducted (armour in B5Wars was straight damage reduction). Ships with adaptive armour had a limite to how many points they could get for any given damage type though so you coulnt end up invincible after taking a few glancing hits :P (In fact I believe white stars could only get 1 point per type whereas vorlons for example could get up to 4)

Or perhaps we read too much into fluff and fiction. I never got the "living ship" thing from the series and the adaptive armor was only described as being able to "learn". I believe that the rules quite clearly reflect this.
