Step 10 Crew Requirements Table Gunners:

Commercial Gunners: 1 per turret, bay, or screen
Military Gunners: 2 per turret, bay, or screen and 1 per 100 tons of spinal weaponry

Weapons & Screens
Fixed mount crew pp. 24-25: best guess pilot if no gunner assigned
Turret crew pp. 24-25: 1 per turret based on Barbette.
Barbette crew p. 25: Like turrets, barbettes require just one gunner to operate
Bay crew Bay Hardpoints Table p. 27: 1 per Small Bay; 2 per Medium Bay; 4 per Large Bay
Spinal Weapon crew pp. 28-29: default to Step 10 requirement 1 per 100 tons of weaponry
Point Defense Battery crew p. 33: best guess none or Default to Step 10 screen?
Energy Shields crew p. 69: best guess none or default to Step 10 screen?
Meson Screen Crew p. 33: Default to Step 10 screen
Nuclear Damper Crew p. 33: Default to Step 10 screen
Black Globe Generator pp. 33: Default to Step 10 screen
Solar Pulse Generator pp. 67-68: Default to Step 10 screen?
Deflector Screen Crew p. 69: Default to Step 10 screen?
White Globe Generator pp. 69-70: Default to Step 10 screen
Gravity Well Generator p. 70: Default to Step 10 screen?

Which bay crew requirement was used for the samples in HG 2e: Commercial: 1, Military: 2, Small: 1, Medium: 2, Large: 4?

Does a Point Defense Battery, or Deflector Screen, or Energy Shield, or Solar Pulse Generator, or Deflector Screen, or Gravity Well Generator require crew? If they do would the default be to Step 10?

Have I gotten the right crew requirements for the other systems listed above?

It's considered an average, so just figure per bay regardless of size.

Point Defense Battery is fully automated and doesn't require any crew. A Deflector Screen and Energy Shield are types of screens so would fall under that for crew requirements.

As for Solar Pulse Generator and Gravity Well Generator, I'de say up to the referee what they would like to utilize.

To ensure I've understood:

The sample designs used the Step 10 Crew Requirements Gunner Commercial: 1 and Military: 2.

What is the reason for including the crew requirements in the Weapons and Screens for bays if they are not applicable?

Point Defense Battery no crew needed.
Deflector Screen and Energy Shield: Commercial: 1 and Military: 2

The Barbette is not addressed in the Crew Requirements Table MgT HG 2e p. 21. The Weapons & Screens chapter indicates that a barbette's crew is like a turret.

Would the Barbette crew be Commercial: 1 and Military: 2 on the Crew Requirements Table?

They are. But the amount in the crew requirement table is meant as an average. If you are doing a ship with all the same size bay or something feel free to use the size crew listed for the size of bay weapon. On larger ships there can be more efficiency.

Yup.

The barbette can also be classified as a heavy turret, so yes treat it as a turret for crew requirements.
 
While we are talking about crews: Is the rule for large ships (¹/₃ crew) applicable to military ships? Can we get by with that few gunners and damage control?

Yes.

What was used on some of the ships in High Guard is a reduction in Engineer, Maintenance, Gunner, Administrator. With Medic and Officer figured on the adjusted crew size.
