I think (at least by the third age) there are Western peasants who are now members of the Malkioni church(es) whose ancestors were Hsunchen, which may or may not count as "non-human"....
Generally the Malkioni* consider the elder races to be "monsters", so not worth saving, and most non-humans are so intrinsically linked to their cultural gods that mass conversion is near impossible. Individual exceptions are, of course, always possible.
Are the Stygian followers of Saint Arkat considered Malkioni (I guess so as ISTR them being branded "Heretics" rather than "Heathens"...). This would certainly give a route for Trollish Malkioni
In a "Three Worlds" model, the Mostali, already being biased towards Essence magic are the most likely converts, probably rationalised as obtaining solace as a way of repairing the world machine (The lucky dwarf can be considered a heretic by both the Mostali and the Malkioni at the same time!)
*or is this largely a Rokari thing, and thus confined to the third age? It might very well be a reaction to the inclusiveness of the God Learners, who were happy to (try to) deal with non-humans. There is almost certainly at least one GL faction who believes that if they can convert a community of non-humans, that community will be happy to let the GL's learn, use (and abuse) their (prvious) myths...
