For GM sheets I've bashed out 4 x A4 word documents, which consists of lots of tables shoved together, which I then put in plastic covers and clip to a homemade cardboard GM screen. On the front I'll put some useful stuff for the PCs to use, or some nice pictures to look at.
My sheets are:
2 x combat
1x skill and tasks
1x miscellaneous.
I did the same for my Judge Dredd (Game Workshop rules) game and it worked pretty well. I find you can keep on adjusting the documents as you progress.
As refs and players get more familiar with the rules then the known stuff can be dropped and other stuff put in - so you probably know how to do personal combat before you all get into doing space combat

. So for Judge Dredd, I'll be dropping some initiative/ combat rules and slotting in some advanced driving rules for the next game.
Plus it's all wipe clean for when the massive bottle of coke explodes or the cat jumps on it and the cup of tea.
I also find, as a new ref, it helps me to learn the system a bit better... learning usually increases if you repeat and practice....
I remember when I were a lad and our group DMs (including me) made our own screens, painstakingly writing out charts and tables for DnD.. this was in the days before PCs. Even doing your own screens on a PC is loads quicker. Happy days.
