Pale grey works well because some of the screen shots I've seen show illuminated panels on the saucer. If the base colour is pale grey then these can be painted bright white or fluorescent yellow and will show up nicely. (The same goes for windows if you have the patience!) To me the TOS originals look off-white, the remastered ones look light grey (and the TAS ones look light grey/blue). Take yer pick, basically. Light Ghost Grey seems to be a popular choice among modellers. I'll be doing the SL 2500 ships in Foundry Arctic Grey (very pale grey), most likely over the dark shade of the same paint if it's any help.
