With the rules so far, the main benefit of high TL in the field of medicine is Medicinal Slow, which greatly speeds up healing. Secondary benefits include replacement limbs (how are limbs lost in Traveller gameplay anyway? Referee fiat?) and somewhat better Medikits. However, I'd like to imagine that higher TL would be able to provide greatly improved medical care to those who can afford it; maybe you should (for the very least) add a +DM to skill checks and/or to the characteristic points restored for using high TL equipment and facilities?
 
At some point organs can't heal any faster without replacing them with cloned or artificial ones. I think the Medicine Slow stuff is a good trade-off. Maybe a really high TL will do instant heals on people. Chambers that injured players step into and come out healed after a few minutes.

Do players even role-play being injured? Do Referees fast-forward through that stuff anyway? "Ok, you guys are all healed at this point. What do you do now?"

That depends on what game I am playing. Some games we have played we would have set "time has passed" moments. Other games we have had a more active down time play for various reasons. In those games healing can be modeled much better. So based on my personal experience I would guess it would depend on the feel the game is trying to have.
