You don't boresight a ship. Just angle the 2 sunhawks for example so that if you draw a line infront of them, the lines cross somewhere within 10 inches. Place bomb like template accordingly. thus targeting the e-mine nature of the plasma web on an empty area of space and if something enters within 3 inches of that spot, boom. It makes a nice area denial weapon.

How are you able to boresight a ship that moves after you have moved?

You dont boresight a ship, but you make sure that your boresights intersect in some point in space, then during shooting, if there is anybody in that space, you can choose to drop an e-mine.

O/T as the e-mine boresight question has already been covered, but two lumbering ships that have both boresighted each other can't get off the boresight on the very next turn, so regardless of which ships moves first they could both get a boresight if they wished.
