Currently, there are three fleet texts out there, 2 auxiliary fleet texts, and a couple of S&P articles. Of the books, only 2 of the 5 are compelling:
-- 1st Edition, Book 2: Out of date.
-- Revised Edition, Book 2: Also, sadly, out of date.
-- Sky Full of Stars: Mostly accurate. Some ships got small changes, and the EA, Vorlons, and Shadows got an overhaul.
-- The Tournament Pack: Now, out of date.
-- Armageddon: Completely accurate. Remember to check the FAQ for a few "hidden" ship revisions, of which a few are very important. Can't remember any Centauri changes.
Additionally, the Dilgar and Drakh are in their own fleet books.
Originally not considered a critical source, the Signs and Portents have had a lot of new ships show up with a vengeance. I cannot remember any Centauri ships being added, but Signs and Portents has been very active with ships since about issue 40 (IIRC), giving the Drazi three major ships, 3 major Brakiri hulls, one big Abbai ship, a marginal Narn, 2 Crusade EA ships, 1 individual league ship -- the Hurr Gunship -- and a whole new race, the pak'ma'ra. It's getting to the point that you really need to read the latest S&P to keep up with it. And I'm certain I'm forgetting others (I have willfully wiped the memory of a revised Troligan from my skull.)
