When are you able to stack them? To get 2 CM the opponent must fail, and if it fails, you don't even need to pick them. So, apart from some Spirit Magic that gives you bypass/enhance parry, is it possible to use 2 bypass/enhance parry?
By RAW just now, I don't think you can, but it is certainly possible to envision magic (Great Shield from old Earth temples, for example) or heroic abilities that give you the effects. I would guess that the "stackable" is just a provision for those cases.
