Hello

Minbaris from the religious Caste has a +2 on all Knowledge checks and can make Knowledge checks untrained.

Are ty limited to common Knowledge (DC 10) for Knowledge they do not have or can they try any DC ?

The rules state that they can make any check , so I would let they make checks as per the rules . However , if you want , you can raise the recommended DC on those Knowledge fields in which they lack any ranks .
