Are the Asshuri detailed in any of the books or supplements? Articles? Thanks for the help!

Yes. You can find stuff about the Asshuri in Free Companies and in the upcoming Shem sourcebook.

Thanks Vince! In the Free Companies, how in depth does it get? Such as the Asshuri get X feat/advantage for being who they are...ect..Or will the more indepth look be part of Shem?

It is more background fluff than rules crunch, although it has a few feats designed for asshuri.

There is also a Solomon Kane story by REH "The Children of Asshur" (a longer fragment), included in the delrey book.

Even if it is not set in the Hyborian Age, it probably isn't so far away a Shemitic city-state and may give you some ideas...
