What has always bugged me is how do you store a pinnace on board? Shouldn't the default be more like the Slow Pinnace, and the Pinnace be the aerofin equipped variant?

No kidding. I can move and manipulate the models fairly easily once they are finished, and I have a hard time imagining a space effective internal berthing set up for a pinnace. I would think it would be best deployed from a docking clamp or external sling/recessed berth but definitely not one to carry around in the hold.
As a note: I wanted to give the pinnace narrower wings that could be folded, or rotated and folded back to lay against the hull. I went with the traditional delta wings. I would have to agree that the slow pinnace would be my first choice for an auxiliary if my ship lacked an external clamp.
spending time looking at deck plans to do these models I am scratching my head a bit as I try to form hulls around them. Some of them make me wince. The Gazelle was easy, it is laid out in a way that fits the exterior view. The Corsair, the Corsair is giving me a fit. Trying to get an exterior view that looks nice, and (approximately) matches the deck plan is definitely a learning experience.
I can see the attraction of just redoing older designs rather than updating, and modernizing the designs. I have the luxury of being abe to devote an entire day or three to a single aspect of an image/model with no deadline. ( and I can ignore the landslide of commentary if I don't get it "right"..I don't but technically I can.)
