You can do a whack-a-mole type game with Traveller, you can even make it medieval or bronze age if you like.
For standard sci-fi, put the character on an alien world and give them a reason to go from point A to point B. A rescue, perhaps, or a recovery.
Then fill the path with alien critters for them to kill.
Example:the Riddick movie Pitch Black. Let the kid be Riddick, so to speak.
There's also the defending against an invasion scenario. The bad guys are landing, the character kills them till they're gone. Then they jump into a transport, get onto their ship and wipe them out. Next stage, go shoot up their home base in the captured ship.
You can do fantasy/historical by restricting the weapons to swords and such.
