I see there's an option for a knight, barbarian and an assassin, but what about playing a normal fighter? Say, a rough and ready merc or a villager defending his family for example?
That would be a "Knight" with a more humble background, as "Knight" is your generic "Civilized" fighter class, Barbarian is your "Un-Civilized" fighter class, Warlock is your Fighter/Mage class where the "Assassin" is your Thief/Spy/Trouble-Shooter/Secret Murderer class
In my opinion, a mercenary could usually be considered either a barbarian or a knight for gameplay purposes, depending on character background & origin. A villager would probably be, unfortunately for him, a normal human.
