All you need to do is to use the HP per location chart from the front of the book and extrapolate. Look at humanoid hit locations.
Each location has 1 HP for every 5 points of CON+SIZ plus or minus an adjustment. So someone with CON+SIZ 23 has a base of 5 HPs in each location plus or minus an modifier. Modifier for legs is 0, abdomen is +1, arms is -1. Therefore our CON+SIZ 23 person has 5 HPs in each leg, 6 in the abdomen and 4 in each arm.
Monsters with non-humanoid body shapes do something similar (with occasional mistakes).
E.g. a quadruped hit location modifiers are:
+0 - legs, head
+1 - hindquarters
+2 - forequarters
Generally, wings have a -2 HP modifer, tails have a -1 HP modifier and really puny limbs have a -1 or -2 HP modifier.
Finally, some things like spiders with spindly legs, have 1 HP for every 10 points of CON+SIZ.
Example a horse with CON 23 SIZ 28 (no idea of how that compares to average values) has
11 HPs in each leg and the head
12 HPs in HQ
13 HPs in FQ
A really useful web supplement would be a sheet showing HP modifiers for common monster body plans.
