If you have multiple fleet carriers do they each grant a +1 to dogfight or is it +1 for any and all? Similarly fighters wouldn't get a 5+ for each carrier to limp back would they?

99% sure it is just like command and doesn't stack

scouting doesn't stack does it? I'm referring to breaking stealth.

The same bonus never stacks. So no, scouting bonuses don't stack.
But bonuses from different sources do stack, such as scouting to reduce stealth and being within 8" and a previous ship already having hit gives a +3.

As for fighter recovery, I do think each carrier can attempt to recover a fighter because it is not a bonus, but an ability of an individual ship. However this would be balanced out by the in ability for the carrier to recover flights beyond its maximum capacity (so an Avenger with 8 fighters on board could not make the recovery roll).

This was discussed awhile ago, extra Fleet Carriers, only give you extra coverage ont he table, you only get 1 chance to recover a flight.
