splitting infantry ?

They can be split at the beginning of the game or at the beginning of every turn. I'm not sure about the full rules about splitting them up, but on the basic cards you can only split guys by preset teams. Usually that means a common model, a rifleman, and a special weapon going with each team.

No word on how to join them back up together. Although, it's probably the same as declaring it at the beginning of a turn and making sure the unit is in coherency.

The whole splitting up the squad is a nice dynamic, although you can cover more area, individual teams are more susceptable to suppression.

I'd figure so. The easiest seems to be if they begin in coherency of each other, you simply declare them "together".

Otherwise you get weird things with actions taken so far, etc.

Whether or not an infantry unit can be broken down into two or more fire teams is detailed on the unit's card. Not all units are that flexible!

Well, the PLA can split into 3 fireteams to better use their massive firepower and numbers, while the US splits into two teams.

The MEA squad can't split at all, but their squads are basically miniature fireteams. If you pump up the number of the mea squad they can be very difficult to suppress.

However, there's no rules on the card to rejoin a unit, so I'm wondering if it's even possible.

My own guess is that re-forming units is handled in the same way as splitting them in the first place. All you would need to do is make sure that all of the squad members are within the leader's command range at the beginning of the turn.
