Modular; the Azhanti is basically a high rise apartment complex, so basically I'd be cheating, since you'd have a series of identical floors for various functions.

It's an inelegant solution to possibly wartime production, and could have structural weaknesses for medium and large sized warships.

Full plans at the Woolshed. Deck Three main cargo is pretty simple so wont take too long - chopping wood for winter notwithstanding.

I have never made a ship under Mongoose Traveller before so I might leave that up to someone with more experience to retro-fit to the rules - but I suspect my plans would break them. You might use the Large Freighter on Suppl 2 Page 44 as a basis. Pretty close all in all.

The original stats were done under GDW High Guard.

I use good old Microsoft Paint.

What are your sources?

Star Wars Deck Plan Alliance (of which I am a member) for starters. Lots of component parts that are easily modified. Also anything that can be reduced to scale without losing definition. Architectural pieces - such as people for starters used in plan views. Right now I am reducing some rugs and carpets down to 35pixels per metre.
