Well, we know the Constitution has ~430 on it. Someone here said the Mars-class battleship comes in at around 1000. I'm sure there's specifics for all the classes that ADB has put out, but I don't know them.
Each SSD in SFB (for a ship which has a "normal" crew) has a set of boxes to show the amount of crew units (and boarding parties) the ship comes with as standard; each crew unit box refers to 10 human-sized individuals (and each boarding party box a squad of five human-sized Marines).
While the boarding parties were retained in the conversion from SFB to FC, the crew unit listings were not; though the number of Marines a ship has in ACtA:SF is approximately half of the amount they have in FC or SFB.
Some of that info has been ported into various Prime Directive sourcebooks; though the fraction of ships shown in PD format is quite low compared to the sheer number of hulls available in SFB.
