Resource for alien creatures (non-sophont)
For the current line is there anything that lists a lot of alien animals and plants? If not, is there anything like that in previous versions? I get the sense that they're kind of spread through a lot of books, but if a lot can be found in one place that would be useful to know.

Most products features one or more entries, not sure if anyone’s ever compiled a list though.
The JTAS journals have several, Referee’s Briefing: Garden worlds too (including the Chamax), Behind the Claw and Great Rift has a bunch each IIRC, Pirates of Drinax has a couple scattered throughout the set (especially Aslan-related)
Are you looking for anything special, or just diversity? A list of how many in each book, or names?

@Annatar, not looking for anything super specific, just something that has a fair number, since the core book has so few. I might check out the ones you mentioned.
I would also mention that I'd find any list of alien lifeforms to be useful for Traveller, even if it's not actually from Traveller. Like if there's something online maybe.

I’ll see if I can at least sweep through the books I own and count the entries therein some day.
I have, from time to time, thought about creating an index of High Guard, Central Supply and bestiary entries from across the books available. Primarily for my own sake but possibly useful for others as well

There’s an old CT supplement called Animal Encounters (Supplement 2) that a bunch of very skeletal animals - just basic stats, no descriptions. Might be worth a look. You can get a PDF copy here.

There's also a Mongoose 1st Edition book by the same name. Supplement 11.

I'm pretty sure that The Trove is not a legitimate source, regarding copyrights and all that.
